After a long hiatus off my blog, I am back!

Today’s beer is Chimay Tripel.

Brief History (via Chimay’s website):

In order to provide for their needs and those of their foundations, as well as to support employment in their region, the Cistercian Trappist monks of Chimay have, since 1862, developed the production of Belgian beers and Trappist cheeses that, thanks to their character and their qualities, found and continue to find great success.

Since 1862 the monks of Chimay have been brewing their first brew “Chimay Première” according to the monastic tradition of natural brewing.

1948, Father Theodore isolates the unique yeast cells that today still form the basis for brewing the Chimay beers and creates the Chimay Red in 33 cl bottle.

Christmas 1948, creation of the Christmas beer that will later become Chimay Blue.

1966, creation of the white cap (now called Chimay Triple).

1982, creation of the Grande Reserve.

1986, creation of the Cinq Cents.

2001, creation of the Triple on draught.

Now let’s get to the beer!

Style: Tripel (Ale)

Appearance: Amber color, cloudy in its nature. Produced about an inch and a half head which quickly dissolved.

Scent/Smell: Distinct scent! Smelled of: Citrus fruits, raisins, malts, definitely bananas and of course wheat.

Taste: Really similar to the nose. Again, some nice malt up front and that gets followed by the same yeast/hop. This citrus had a more of an orange and flower type of flavor. Very good overall in the taste department.

Mouthfeel: The body is on the medium side of light. Has a decent amount of carbonation. Very easy going down!

Drink with (food): Chimay also makes cheeses which would go great with the beers they produce. Chicken and fish would also go great with this particular brew.

Grade: A

This is one of the best beers I’ve ever had. It was quite expensive though, so I don’t know how often I will be able to have the pleasure of drinking this wonderful brew!
