Background Information (via gasko-meyer): The Chimay Brewery (“Bières de Chimay“) is one of the best known Trappist Breweries in the world. The Belgian brewery was founded inside the abbey Notre-Dame de Scourmont, in the Belgian municipality of Chimay in 1863. The brewery produces three widely distributed strong pale ales and one medium strength pale ale (which is not sold outside the abbey). The brewing plant was updated in 1988, and now produces 120,000 hectolitres annually annually. Since 1876 the monastery has also made, and currently offers four, cheeses. Like many strong Belgian beers, those produced at Chimay age well and can be cellared for at least five years while maintaining quality. The Chimay Blue can be aged for upwards of fifteen years.

Appearance: Copper like color with a white creamy head.
Scent/Smell: It has a light aroma with hints of apricots, bananas, cloves, plums, some spice and breadiness.
Taste: Taste is rich and strong, containing caramel, dried cherry fruit, cloves, and sweet malts. There’s also a slight bitterness.
Mouthfeel: Medium body and well carbonated.
Drink with (food): Beef and buttery cheeses.
I LOVE THIS BEER! I plan on going out tomorrow and getting another bottle at the House of Brews!
